{"id":2302,"date":"2017-09-01T22:16:26","date_gmt":"2017-09-01T20:16:26","guid":{"rendered":"http:\/\/www.wonderpetasse.com\/?p=2302"},"modified":"2021-09-11T08:35:42","modified_gmt":"2021-09-11T06:35:42","slug":"framboisier-de-yann-couvreur","status":"publish","type":"post","link":"https:\/\/www.wonderpetasse.com\/fr_fr\/framboisier-de-yann-couvreur\/","title":{"rendered":"Mon Framboisier selon la recette de Yann Couvreur"},"content":{"rendered":"\n<p class=\"has-text-align-justify\">J&#8217;ai r\u00e9alis\u00e9 ce Framboisier selon la recette du Chef P\u00e2tissier Yann COUVREUR parce qu&#8217;apr\u00e8s mon passage au sein de l&#8217;\u00e9mission LES ROIS DU G\u00c2TEAU, j&#8217;ai essuy\u00e9 les foudres de certains internautes qui ont \u00e9crit notamment que la cuisine avec un robot cuiseur tel que mon fid\u00e8le commis le <strong><a href=\"https:\/\/track.effiliation.com\/servlet\/effi.redir?id_compteur=22391664&amp;url=https%3A%2F%2Fwww.boulanger.com%2Fref%2F1142772\" target=\"_blank\" rel=\"noreferrer noopener\">Companion &#8211; click ici pour voir le dernier mod\u00e8le &#8211;<\/a><\/strong> , ce n&#8217;\u00e9tait pas de la cuisine mais <em>&#8220;juste de l&#8217;assemblage&#8221;<\/em>.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Je n&#8217;ai pas r\u00e9pondu aux diff\u00e9rentes critiques puisqu&#8217;aussi bien, et ayant \u00e9t\u00e9 s\u00e9lectionn\u00e9e pour l&#8217;\u00e9preuve 2 de cette \u00e9mission, j&#8217;ai eu \u00e0 r\u00e9aliser mes 6 g\u00e2teaux individuels dans une cuisine professionnelle que je ne connaissais pas et, bien \u00e9videmment, sans mon Companion.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">L\u00e0, beaucoup se marraient d&#8217;avance en se disant que <em>&#8220;WP sans son Companion, elle va se foirer lamentablement&#8221;<\/em>.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Autant dire que c&#8217;est parce que j&#8217;ai bien appr\u00e9hend\u00e9 les cuissons et les temp\u00e9ratures avec le Companion que je peux r\u00e9aliser invariablement mes recettes avec ou sans robot.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Avant que je ne dispose de ce robot dans ma cuisine, je ne captais pas l&#8217;importance d&#8217;un thermom\u00e8tre culinaire pour ne pas faire coaguler les \u0153ufs quand on r\u00e9alise un curd, pas plus je ne comprenais l&#8217;importance de faire &#8220;pousser&#8221; une p\u00e2te lev\u00e9e et pire encore je ne comprenais strictement rien \u00e0 la raison pour laquelle je foirais des recettes que je pensais pourtant suivre \u00e0 la lettre.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Ce robot m&#8217;a permis de mieux comprendre les interactions des diff\u00e9rents facteurs inh\u00e9rents \u00e0 la cuisson, au p\u00e9trissage, \u00e0 la pousse etc&#8230; et c&#8217;est parce que j&#8217;ai enfin compris l&#8217;importance de ces diff\u00e9rentes variables \u00e0 son usage que je peux r\u00e9aliser toute ma cuisine sans lui \u00e9galement.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">J&#8217;ai donc choisi de r\u00e9aliser la recette d&#8217;un grand Chef, celle de Yann COUVREUR et son <span style=\"color: #ff00ff;\"><a href=\"http:\/\/www.letribunal.com\/yann-couvreur-fraisier\/\">Fraisier <\/a><\/span>qui est en page de couverture du magazine Fou de P\u00e2tisserie parce que j&#8217;avais \u00e9norm\u00e9ment de framboises et c&#8217;est donc devenu un framboisier.<\/p>\n\n\n\n<p class=\"has-text-align-justify\">Et j&#8217;ai r\u00e9alis\u00e9, naturellement, toute la recette avec mon Companion parce que m\u00eame si il touille \u00e0 ma place, c&#8217;est la recette d&#8217;un grand Chef que j&#8217;ai comprise &#8211; Casser les oeufs, ajouter le sucre et battre au fouet \u00e0 la main pour obtenir une m\u00e9lange mousseux qui va \u00e9paissir progressivement jusqu&#8217;\u00e0 obtenir une texture de sabayon.<\/li><li>Retirer le cul de poule du bain-marie et continuer de monter \u00e0 la main (ou au fouet \u00e9lectrique) jusqu&#8217;\u00e0 refroidissement du m\u00e9lange. Puis incorporer la farine tamis\u00e9e en plusieurs fois tout en m\u00e9langeant \u00e0 l&#8217;aide d&#8217;un \u00e9cumoire (ou d&#8217;une <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/amzn.to\/2TRgMnM\" target=\"_blank\">Maryse &#8211; click ici &#8211;<\/a><\/strong>) afin de pr\u00e9server la l\u00e9g\u00e8ret\u00e9 de l&#8217;appareil.<\/li><li>Sur une plaque de four recouverte de papier cuisson -ou <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/amzn.to\/3dgV702\" target=\"_blank\">un moule \u00e0 g\u00e9noise en silicone &#8211; click ici<\/a><\/strong> &#8211; l\u00e9g\u00e8rement huil\u00e9e, \u00e9taler la pr\u00e9paration \u00e0 l&#8217;aide <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/amzn.to\/2ZQxPtS\" target=\"_blank\">d&#8217;une spatule coud\u00e9e -click ici-<\/a><\/strong>. Cuire \u00e0 180\u00b0C (Th 6) pendant 8 minutes (pour mon four c&#8217;\u00e9tait 10 minutes donc : \u00e0 surveiller selon les fours).<\/li><li>Apr\u00e8s refroidissement, d\u00e9couper deux cercles de g\u00e9noise de <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/amzn.to\/2MbtdXl\" target=\"_blank\">12 cm &#8211; click ici &#8211;<\/a><\/strong> et <strong><a href=\"https:\/\/amzn.to\/2XfGPqY\" target=\"_blank\" rel=\"noreferrer noopener\">10 cm &#8211; click ici &#8211;<\/a><\/strong>  de diam\u00e8tre \u00e0 l&#8217;aide d&#8217;emporte-pi\u00e8ces.<\/li><\/ol>\n\n\n\n<p class=\"has-text-align-right has-pale-pink-background-color has-background\"><strong><em>L&#8217;adaptation de la recette au Companion :<\/em><\/strong><em>Dans le bol du robot muni du batteur, mettre les oeufs, le sucre et lancer Vitesse 7, 1 minute. Puis programmer Vitesse 6, 60\u00b0C, 7 minutes.
